Unlike other importers, we don’t use distributors or middlemen but go straight to the producer. In some cases it has taken us many years to find suppliers: a slow process that is best illustrated by our small, delicious product range. Back in London our maturing rooms are located in a Victorian railway arch underneath the main line from London Bridge to Dover. The cool, damp brickwork provides perfect conditions for all our products. We share the arch with a brewer and a cheese maker: a heady gastronomic mix if ever there was one.
