With grilled fennel and buffalo mozzarella

Slice the fennel lengthways into 1cm pieces, and boil until just tender. Drain and dry on a cloth, then grill on both sides. Toss the rocket and grilled fennel in olive oil and lemon juice, and season. Place on a plate with the sliced mozzarella and top with Parma Ham.

With rocket and parmesan

This is a very traditional starter in Italy where the meat used is commonly bresaola (air cured beef) but it is even more delicious with Parma Ham. Dress the rocket leaves and drape them with slices of Parma Ham. Sprinkle with beautiful rough nuggets of Parmesan.

With ripe figs or melon

The Italian classic and, when the fruit is in season, very little can beat it. Choose ¼ of a melon or 2-3 figs per person.

With zucchini and buffalo mozzarella

Using a potato peeler shred the zucchini into fine ribbons. Mix lemon juice with some olive oil and season. Toss the zucchini in the dressing, adding a few rocket and mint leaves. Place on a plate, add the mozzarella, and lay slices of Parma Ham over.

With salami, olives and sott’olio vegetables

Make a beautiful platter arranging assorted salami and slices of Parma Ham. Leave a space in the middle for a selection of olives, semi-dried tomatoes and artichoke hearts in oil. Serve with good bread and unsalted butter.
