Prawn, Parsley And Parmesan Frittata

Serves 2
Eggs, 6
Parsley, 1 bunch, chopped
Lemon, zest of one and juice Of ΒΌ
Parmesan, 60g
Fresh Peeled Prawns, 180g
Olive Oil and Butter
Chilli to taste
Whisk the eggs with seasoning, parsley, lemon zest and juice and the grated Parmesan. Roughly chop half the prawns, leaving the rest whole, and add them to the bowl.
In a small, oven-proof frying pan heat the butter with a good splash of oil then add the mixture. Slowly move a spoon around the eggs for about a minute on a medium heat, then put the pan in the oven.
Cook for 4-5 minutes until golden. Sprinkle the chilli onto it and serve it with a rocket salad and some good bread.
