Parmesan

The storage rules for Parmesan are pretty much unique. This is because not many cheeses are aged for such a long time or have such a low moisture content. For these reasons Parmesan needs to be kept completely airtight to stop it drying out. Firstly, keep it wrapped in our proper cheese paper. That way it can breathe and won’t go mouldy. Then put a tight layer of either foil or clingfilm around it. A zip lock bag or freezer bag wrapped around the cheese will do just as well. As for those special cheese storage boxes, there is still too much air circulating in them to make them ideal for Parmesan but they would be better than nothing. Follow these instructions and an average sized piece of Parmesan will last 6-8 weeks.
